National Avocado Day: 5 Easy Avocado Recipes

Avocado toast may be trending but there are easier ways to get your avocado fix than spending $12 on a ​slice of bread. Avocados are a brain and heart-healthy fruit. They help with digestion and high-cholesterol as well as have been proven to prohibit growth of prostate cancer. As a healthy fat and yummy addition to most meals, it's no wonder ​avocados deserve their own day. For National Avocado Day, we're sharing our favorite ways to eat avocado, including avocado ​brownies that are Hired Hand Team approved.

Our favorite avocado recipes:


Mexican Guacamole
One of the easiest, and most delicious avocado snacks. We recently made this at the office and it was a hit! It's also super easy to make and the recipe can be played around with to make any picky eater happy.

Ingredients
6 Avocados
​3 tbs of plain greek yogurt
6 tbs cilantro, chopped
1/2 c. red onion, diced
1-2 jalapenos to taste, diced
5 tsp lime juice
1/2 tsp salt

Recipe
Serves 6-8 people

Combine all ingredients in a blender or food processor and blend until creamy. If you like your guacamole chunky, place all the ingredients in a bowl and mash until your desired consistency.




Chicken Avocado Burrito Wraps
These are super easy to make for lunch or dinner and the best part is you can use whatever you have in your fridge as toppings. Another way to switch this recipe up is to use steak instead of chicken.

Ingredients
4 large flour tortillas
2 c cooked chicken, diced
1 avocado
1 c. mexican shredded cheese
4 tbs plain greek yogurt
2 tbs cilantro
Olive Oil Spray

Recipe
Makes 4 burritos

1. Heat up your griddle or panini maker to medium-high heat and spray with olive oil
2. Place all your toppings onto the flour tortilla
3. Fold the tortilla into a burrito by pulling opposite sides of the tortilla together and then rolling in the other two ends to close
4. Place the burrito, tortilla seam down, onto the panini maker and close the top
5. Hold the top down for about 2 minutes until the top of your burrito is golden brown
6. Remove from the panini maker and enjoy!




Avocado Toast
We had to include avocado toast. These are really easy to make for breakfast and there are so many options for toppings. Avocado really does go with everything.

Avocado Toast

Lox​acado Toast: sliced avocado, lox, capers and dill

Southwest Toast: mashed up avocado with salt and pepper, salsa of choice, black beans and cilantro

Everything Bagel Toast: cream cheese spread, mashed and diced avocado, Everything But The Bagel seasoning

Hot Breakfast Toast: mashed avocado, salt, pepper, red chili pepper flakes, hot sauce, poached egg

Caprese Toast: sliced avocado, basil leaves, sliced tomatoes, mozzarella cheese pearls, balsamic vinegar





Avocado Brownies
I know, it sounds odd, but trust us, ​they're delicious! These brownies are gluten free and so creamy from the avocado (which you can't even taste). You use the avocado in both the brownie mix and the frosting ​so plenty of healthy fats in this dessert.

Brownie Ingredients
2 tbs. coconut oil
​16 oz. dark chocolate chips
​2 avocados, pureed in a blender or food processor
3 eggs, room temperature
1/2 c. honey
1/2 c. cocoa powder
1 tsp. vanilla bean paste or extract
1/2 cup coconut flour

Frosting Ingredients
1 avocado
3 tbs. honey
1 tbs. cocoa powder

Recipe
Makes about 12 brownies

1. Preheat your oven to 400 degrees and spray a 9x13 inch pan
2. Bring water to a simmer and place a bowl on top of the pot. Make sure it does not touch the water. Add chocolate chips and coconut oil to the bowl and stir constantly making sure the water doesn't boil and the chocolate doesn't burn.
3. When chocolate is completely melted, remove from heat and set aside.
4. In a separate bowl, combine pureed avocado, honey and vanilla.
5. Add the avocado mixture ​to the chocolate ​and stir until completely mixed through.
6. Add each egg, one at a time, making sure each is mixed in before adding the next.
7. Stir in the coconut flour and cocoa powder until the batter is mixed and smooth.
8. Pour the batter into your 9x13 inch pan and smooth top. Cook for 12-15 minutes until the top is firm.

Frosting
1. Combine avocado, honey, and cocoa powder in a blender and mix until combined.
2. Frost the brownies after they have cooled and store in an airtight container in the fridge.





Avocado Basil Pesto with Angel Hair Pasta
Another easy dinner! This one takes 10 minutes to make. Just put your pasta in to boil, combine all the pesto ingredients in your blender, blend until it becomes a creamy sauce, and you're done!

Ingredients
​10 oz. spaghetti
2 avocados
1 c. basil leaves
4 garlic cloves, minced
2 tbs. lemon juice
1/2 c. olive oil
1/2 c. walnuts
salt and pepper to taste
